WINES OF THE BIEDERMANNHOF

All of our vineyards are located at an altitude of approximately 350 m on the southeast-facing slope on which the hotel stands. The sediments deposited here during the ice age resulted in the moraine hills that are typical of Alpine valleys. This land represents our very special capital. Our environmentally-friendly working practices in the vineyards help promote the biological equilibrium of the vines in a natural way. The greenery between the rows of vines regulates the air and water content of the land, aids humus formation, protects against erosion and is a useful habitat for beneficial organisms. The composition of the land is the main reason why our estate produces fruity mineral white wines and deep, content-rich red wines.

SOUTH TYROLEAN LAGREIN-MERLOT “GALLUS”

Grape variety: Merlot (60%) Lagrein (40%)
Yield: 50 hl/ha
Vinification: mash fermentation in stainless steel tanks, careful mash stirring process; organic acid reduction and aging in old (40%) and new (60%) oak barrels


Characteristics
Colour: pomegranate red with violet reflexes
Scent: intensive scents of bitter chocolate and violets with hints

of ripe fruit (damsons and redcurrants)
Taste: velvety with soft tannins, distinctive structure and very long finish
Serving temperature: 18 ºC
Storage: 8-10 years

SOUTH TYROLEAN LAGREIN

Grape variety: Lagrein
Yield: 70 hl/ha
Vinification: mash fermentation in stainless steel tanks, careful mash stirring process; organic acid reduction and aging in old (80%) and new (20%) oak barrels


Characteristics
Colour: pomegranate red with violet reflexes
Scent: intensive scents of bitter chocolate and violets
Taste: velvety with soft tannins, distinctive structure and very long finish
Serving temperature: 18 ºC
Storage: 8-10 years

Grape variety: Lagrein
Yield: 70 hl/ha
Vinification: traditional method used for rosé wines at controlled temperature in stainless steel tanks


Characteristics
Colour: antique wax pink, lucent, very clear
Scent:  hints of blueberries with slight rose bouquet
Taste: harmonic, with a fresh acidity, very drinkable
Serving temperature: 10-12 ºC
Storage: 2-3 years

SOUTH TYROLEAN LAGREIN KRETZER

Grape variety: Vernatsch
Yield: 90 hl/ha
Vinification: mash fermentation at controlled temperature in stainless steel tanks with careful mash stirring; organic acid reduction and storage in wooden barrels


Characteristics
Colour: pale ruby red
Scent: fruity and flowery with characteristic almond notes
Taste: dry, fresh and harmonic with a pleasant acidity
Serving temperature: 13-15 ºC
Storage: 2-3 years

SOUTH TYROLEAN VERNATSCH

Grape variety: Weißburgunder (Pinot Bianco)
Yield: 90 hl/ha
Vinification: fermentation at controlled temperature in stainless steel tanks, storage and aging on high-quality lees


Characteristics:
Colour: pale yellow with greenish reflexes
Scent: scents of ripe apples, tropical fruits and citrus in bouquet

Taste: structured and harmonic with a pleasantly fresh acidity
Serving temperature: 10-12 ºC
Storage: 2-3 years
